Get yo' spice on with this plant-based Rendang curry. Thanks to a long slow braise in the oven, the plant-based meat substitutes & baby potatoes soak up the spicy sauce, sitting on baby spinach and brown rice, while the gut-health promoting pickled pineapple adds zing. Crunchy cucumber, green beans, carrot and red pepper finish the dish.

 

Ingredients: rendang curry mix [sesame oil, vEEF pattie, TVP (textured vegetable protein), Simplot 'Not Beef', jackfruit, rendang paste], pineapple, long red chili, red pepper, carrot, pickling liquid, baby potatoes, coconut milk, water, coriander seeds, star annise, kaffir lime, red chili paste, unrefined sugar syrup, coriander root, tomato paste, salt, ginger, french eschalot dry, herb lemongrass, garlic (peeled), turmeric, brown rice, baby spinach
